Sweet Potato Brownies

Sweet potatoes are an easy way to get a lot of nutrition in one nice little package. They are naturally sweet, provide anti-inflammatory benefits, and can improve the body’s regulation of blood sugar—even in people with Type 2 Diabetes. Sweet potatoes have tons of vitamins and minerals such as vitamins A, C, B6, B1, B2 and B3 and manganese, copper, phosphorus, potassium and fiber. To receive the most health benefits, choose organic ingredients. Ingredients


1 cup mashed sweet potato

½ cup smooth nut butter of choice
(I recommend almond or cashew butter)

2 tablespoons maple syrup

¼ cup cocoa powder

Handful of carob chips (optional)

Directions


  1. Preheat the oven to 350ºF and grease a small cake/loaf pan
  2. On the stove, melt nut butter with maple syrup.
  3. In a large bowl add the mashed sweet potato, melted nut butter and maple syrup, and cocoa powder and mix well.
  4. Fold in carob chips.
  5. Pour mixture into greased pan and bake for 20 minutes or until cooked through.
  6. Remove from the oven and allow to cool completely before slicing and refrigerating.
  7. These brownies are best when cooled completely. Store in fridge or freezer and ENJOY!
